| Prawn Curry |
Ingredients
1. 250 grams prawns (cleaned)
2. 400 ml (2 small tetra packs) coconut milk.
3. 1 large onion (chopped)
4. 1 large tomato (julienne)
5. 1 lemon
6. 15-20 curry leaves
7. 2 slit green chilies
8. 1 tablespoon chopped ginger
9. 4-5 kokum (amsul)
10. 1 teaspoon mustard seeds (rai)
11. 2 teaspoons red chili powder
12. 1 teaspoon turmeric
13. 1 tablespoon fish curry masala
14. 2 teaspoons oil
15. Salt as per taste.
Cooking Instructions
Heat oil in a deep pan then add mustard seeds, once they crackle add curry leaves, ginger, green chilies and saute for a minute.
Add onions and cook till the onions are translucent.
Then add the coconut milk along with turmeric, red chili powder, fish masala, kokum and salt. Bring this mixture to a simmer and stir continuously for 5 minutes.
Add the prawns and tomatoes and cook till the prawns are done.
Add freshly squeezed lemon juice and serve with rice or appams.

Mm looks yumm.. Would you recommend a vegetarian version, say with waal dal..? And a substitute for the fish curry masala?
ReplyDeleteHey Natasha thanks, substitute the prawns with a bowl of mix boiled vegetables(cauliflower, carrot, beans, capsicum and potato).
DeleteFish curry masala is a vegetarian masala,but if your not comfortable with the name add malvani masala.
