| Banana Walnut Muffin. |
Ingredients

1 cup flour (maida)
2. 2 ripe bananas (smashed)
3.
¼ cup sugar
4.
½ cup roughly chopped walnuts
5.
¼ cup oil
6.
2 medium sized eggs
7.
1 teaspoon vanilla essence
8.
1 teaspoon baking powder
9.
1 teaspoon soda bicarbonate
10.
Pinch of
salt
Cooking Instructions
Pre-heat the oven to 180 degrees.
Coat the walnuts in some flour and keep aside, this prevents
them from sinking to the bottom.
In a large mixing bowl sift the flour along with the baking powder,
soda bicarbonate and salt.
To the above mix add sugar, flour coated walnuts and mix
gently.
Now add all the wet ingredients- oil, eggs, smashed bananas
and vanilla essence.
Mix gently, using an ice cream scoop pour the batter in a
muffin try.
Bake at 180 degrees for 20-25 mins. Do keep an eye on the
muffins.
Remove the muffin tray from the oven, let the muffins cool for
15 mins.
Serve the muffins with a cup of tea or a scoop of vanilla
ice cream.
