Crispy baby Corn


A great snack, that's easy to make and delicious in taste. You can substitute the baby corn with paneer, chicken, prawns, potato or a bowl of assorted vegetables.



               Ingredients


1.       1 pack baby corn
2.       8-10 garlic cloves (finely chopped)
3.       1 cup maida(refined flour)
4.       1 cup cornflour
5.       2 spring onions (chopped)
6.       1 tablespoon soy sauce
7.       1 tablespoon red chilli sauce
8.       ½ tablespoon vinegar
9.       2 tablespoons ketchup
10.   1 tablespoon honey
11.   1 teaspoon roasted sesame seeds
12.   Oil for deep frying
13.   Salt and water

Cooking Instructions-

Mix maida, cornflour and salt in a mixing bowl.

Then add a tablespoon of water at a time till the batter is of perfect dipping consistency. Make sure the batter is not very thin or thick.

Cut the baby corn in 1 inch pieces. Coat the baby corn with the batter and deep fry. Remember not to over crowd the frying pan. Fry for 3-4 minutes then remove the baby corn on kitchen paper. Once all the pieces are done, re fry the baby corn for a further 5-6 minutes or till they turn golden brown.

Now for the sauce, heat 2 teaspoons of oil in a non-stick pan. Then add garlic and the onion part of the spring onion and sauté for 2 minutes.

To this add red chilli sauce, ketchup, soy sauce, vinegar, honey and salt. Cook till the mixture comes together and forms a nice sauce-like consistency.

Add the fried baby corn and coat them with the sauce. Cook for 2-3 minutes.

Remove in a serving bowl and garnish with spring onions and sesame seeds.
