| Lettuce Wraps |
These healthy and refreshing lettuce wraps are a great lunch/dinner option, loaded with Thai flavours. A recipe perfect for a beautiful summer day.
Ingredients

500 grams minced chicken

2 iceberg lettuces
3.
1 cup yellow and red bell peppers(chopped)
4.
½ cup spring onion (chopped)
5.
2 tablespoons garlic (finely chopped)
6.
½ cup fresh basil
7.
½ cup red chilli paste
8.
½ cup ketchup
9.
2 teaspoons soy sauce
10.
2 tablespoons Jaggery (preferably organic for
dark colour)
11.
½ cup roasted peanuts (roughly chopped)
12.
Salt
13.
3 tablespoons oil
Cooking instructions
For the filling
In a non-stick pan, add 2 tablespoons of oil. Once the oil
is hot add the chopped garlic and sauté for half minute. Then add the spring
onions and bell peppers and cook for 2-3 minutes.
Add the minced
chicken and cook till the mince is dry, this will take some time. So, have
patience and keep stirring the mince.
Once the chicken mince is cooked add salt, soy sauce and
basil.
Remove the mince in bowl and let it cool.
For the
Sauce
In a non-stick pan add 1 tablespoon of oil, then add the
chopped garlic and red chilli paste. Cook till the oil starts separating from
the red chilli paste (soak 10 Kashmiri red chillies in water for 1 hour, remove
the chillies from the water. Use a mixer to make a fine paste.)
Then add the jaggery, ketchup, salt and cook till all the
ingredients come together.
Let the sauce cool for an hour.
Assembly
Carefully cut the core of the iceberg lettuce. Then run some
ice-cold water through the iceberg lettuce. After that you will be able to
separate the leaves and get perfect lettuce bowls.
Take a lettuce bowl, add a generous portion of chicken mince,
then a spoon of the sauce and some peanuts.
Fold the lettuce and enjoy your
lettuce wraps.
