Spinach and Mushroom Fettucine



Ingredients

1.       250 grams fettuccine
2.       1 cup spinach
3.       1 cup chopped mushrooms (1/2 cup finely chopped and ½ cup cut in cubes)
4.       1 large onion
5.       8-10 cloves finely chopped garlic
6.       2 tablespoons flour (maida)
7.       1 cup milk
8.       1 tablespoon butter
9.       ½ cup grated cheddar cheese
10.   2 teaspoons chilli flakes
11.   2 teaspoons oregano
12.   2 teaspoons black pepper
13.   2 table spoons olive oil
14.   salt

Cooking Instructions-

Pasta- in a large pot boil water with some salt. Once the water comes to a rapid boil add the fettuccine and cook till the pasta is as per your liking. Drain the pasta and keep aside. Remember to keep a cup of the pasta water for the sauce.

Mushroom sauce- in a pan add 1 tablespoon of butter and 1 tablespoon of olive oil. Once the butter melts, add finely chopped garlic and onion. Cook for 2-3 minutes. Then add finely chopped mushrooms. To this add 2 tablespoons of maida and cook for 4-5 minutes stirring continuously. Slowly add milk to the maida stirring continuously with a whisk.  Till you get a smooth sauce like consistency. If needed you can add pasta water.

Make sure there are no maida lumps in the sauce.  Season the sauce with salt, pepper, oregano and chilli flakes.

Assembly- In a non-stick pan heat 1 teaspoon of oil. Add roughly chopped spinach and mushroom cubes. Sauté for a minute add a cup of boiled fettuccine and 1 ladle of mushroom sauce.

Let the pasta and sauce cook together for ½ minute. Remove in a bowl and garnish with oregano, pepper , chilli flakes and a generous  portion of grated cheese.


Make one portion at a time. The above ingredients will make 5 portions. You can also add grilled chicken to the pasta.
