Mexican Salad with nachos




Mexican Salad with Nachos

A healthy and colourful salad thats perfect for parties, games or just to have as a complete meal.





Ingredients-

1. 1 cup red beans
2. 1/2 cup corn
3. 1 medium red bell pepper
4. 1 medium tomato
5. 1 medium onion
6. 2 tablespoons coriander
7. 1 lemon
8. 2 teaspoons paprika
9. 1 tablespoon honey
10. 2 teaspoons chilli flakes
11. 2 tablespoons of any cheesespread
12. 2 packs of nacho crisps
13. Salt and pepper.



Cooking Instructions-

Soak the red beans in water for 10 hours. Pressure cook the beans till soft.(5-6 whistles)
Let the beans cool.

Char grill 2 corn cobs on a gas flame. Then remove the kernels.

Finely chop onion, tomato, red bell pepper and coriander.

In a mixing bowl bring all the ingredients together, except the nacho crisps.

Refrigerate the salad for 30 minutes.

Serve with Nacho crisps.
