| Crispy noodles with peanut and chicken sauce |
Vegetarians can add a cup of mix veggies(brocolli, bell peppers, carrots, beans etc)instead of chicken.
Non vegetarians can also add sea food.
Ingredients-
1. 1 pack noodles
2. 200 grams chicken
3. 8-10 garlic cloves finely chopped
4. 1 carrot finely chopped
5. 3 tablespoons roasted peanuts
6. 1 tablespoon seasame seeds
7. 2 tablespoons peanut butter
8. 1 tablespoon light soy sauce
9. 1 tablespoon dark soy sauce
10. 1 tablespoon oyster sauce
11. 1 tablespoon honey
12. 1 tablespoon paprika
13. Oil and salt
Cooking instructions-
Boil the noodles as per the instructions on the packet.
Drain all the water and let the noodles cool for 2-3 hour, preferably in the fridge.
This can also be done in advance.
For the sauce-
In a mixing bowl add peanut butter, light soy sauce, dark soy sauce, oyster sauce(optional), honey and paprika.
Wisk for a minute or till the lumps in the peanut butter disapper.
In a pan heat 1 tablespoon of oil. Once hot add garlic, carrots, peanuts, seasame seeds and chicken(cut in small bite size peices) and cook till chicken is 80% done.
Then add the sauce along with salt and a cup of water and bring to a boil.
Then add roasted peanuts.
Then add roasted peanuts.
For crispy noodles-
In another pan add 1 tablespoon oil.
Add the cooked and cooled noodles to the hot oil. Let the noodles crisp up on each side for 4-5 minutes.
Use a plate to flip the noodles.
Assembly-
Remove the crispy noodles in a plate and pour the peanut and chicken sauce over the noodles.
Serve hot.
