| Crumb coated paneer with grilled vegetables |
(serves 2)
1. 1 block paneer
2. 1/2 zucchini
3. 1 medium brinjal
4. 1/2 cup button mushrooms
5. 4-5 garlic cloves
6. 1/2 cup bread crumbs
7. 2 teaspoons chilli flakes
8. 2 teaspoons paprika
9. 2 teaspoons oregano
10. 2 tablespoon mayo
11. 1 tablespoon picked jalapenos
12. Salt and pepper
Cooking instructions-
Cut the paneer in 2"x2" squares. keep them about 1/2" thick.
In a bowl add bread crumbs, 2 teaspoons paprika, 1 teaspoon chilli flakes, grated garlic, salt and mix well.
Coat the paneer peices with the crumb mix and refrigerate for 30 minutes.
Meanwhile cut the brinjals and zucchini in long stripes. half the mushrooms.
Use a gridle pan or regular pan to grill the vegetables, using olive oil.
Once the vegetables are cooked remove in a bowl and add salt, pepper, oregano, chilliflakes and olive oil.
Grill the crumb coated paneer on both sides for 2 minutes.
For the dip mix together mayo and finely chopped jalapenos.
And we are done.
Serve as shown in the picture(optional).
