Chicken and vegetables Chinese style


My to go Chinese style Vegetables and chicken gravy is a complete meal. You can also add prawns and fish.

Vegetarians can obviously leave the chicken and add more veggies like broccoli, brinjal, mushrooms or even tofu.


Ingredients-

1. 400 grams boneless chicken
2. 1/2 red bell pepper
3. 1/2 yellow bell pepper
4. 1 medium carrot
5. 1 medium onion
6. 1 medium cucumber
7. 2 tablespoons ginger and garlic (finely chopped)
8. 4-5 dried red chillies
9. 2 tablespoon tomato ketchup
10. 1 tablespoon cornflour
11. 1 tablespoon honey
12. 1 reaspoon white vineger
13. 1 tablespoon light soy sauce
14. 2 tablespoons oil
15. salt and pepper.



Cooking Instructions-

In a non-stick pan add 1 tablespoon of oil. Once the oil is hot add 1 tablespoon of finely chopped
ginger and garlic. Then add the chicken along with salt and pepper. Cook for 7-8 minutes or till the chicken is 80% cooked.

Remove the chicken in a bowl and cover it to keep it moist.

In the same pan add 1 tablespoon of oil. Once the oil is hot add 1 tablespoon of finely chopped ginger and garlic, saute for a minute then add the dried red chillies, onions, carrots, bell peppers, and saute for 3-4 minutes.

To the vegetables add soy sauce, honey ,tomato ketchup, salt, pepper and 1.5 cups water.

Then add the cooked chicken, cucumber and white vineger.

Stir well. Mix cornflour with some water in a seperate bowl.

Add this mix to the sauce.

Cook for 5-6 minutes or till the veggies and chicken are well done.

Serve with rice or noodles.
